Full of fantastic produced sourced locally, this dessert is a Summer favourite for us, and even better, it will only take you about 15 minutes to prepare!
 
We like to make ours with Manx gooseberries from a local farm that supplies us with these tangy little berries each year when they come into season and each year we like to get creative with our recipes- we've tried our hand at gooseberry gin, classic gooseberry fool, and of course a delicious gooseberry crumble!
 
This one is super easy to put together, and oyu won't need much time to whip one up either. You'll need about 15 minutes to prep and then 40 minutes to cook your crumble until golden.

Ingredients

  • 1 pack of fresh Manx gooseberries (available at Cooil Road, Prospect Terrace, and Shorpite stores!)
  • 200g caster sugar
  • 85g Isle of Man Creamery Salted Manx Butter
  • 80g Brown Sugar
  • 180g Plain Laxey Flour
  • 2tbsp cold water 
  • Isle of Man Creamery Fresh Double Cream (to drizzle)

Instructions

  1. To begin, top and tail the gooseberries and rinse in cold water
  2. add to your dish and sprinkle over the caster sugar and cold water (2tbsp), give the dish a little shake to coat the gooseberries.
  3. In a mixing boal, combine the flour, sugar, and butter and rub until you get to a crumbly texture.
  4. Cover the gooseberries with the crumble mix and pop into the over for about 40 minutes or until golden and bubbling.
  5. Remove fromt he oven and allow to cool slightly.
  6. Dish out your servings and pour over some fresh Manx double cream to serve- enjoy!
