Ingredients

2 medium kohlrabi

1 large carrot

1 red bell pepper

1/2 red onion

1/4 cup fresh cilantro

1/4 cup fresh mint

1/4 cup fresh parsley

DRESSING

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

1 tablespoon Dijon mustard

1 clove garlic

Salt and pepper to taste

Instructions

STEP 1 - Prepare Vegetables:

  1. Peel and cut the kohlrabi and carrot into long, thin strips.
  2. Cut the red bell pepper into long, thin strips.
  3. Thinly slice the red onion.
  4. Chop the cilantro, mint, and parsley.

STEP 2 - Make the Dressing:

  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, and minced garlic.
  2. Season with salt and pepper to taste.
  3. In a large bowl, combine the julienned kohlrabi, carrot, red bell pepper, and sliced red onion.
  4. Add the chopped cilantro, mint, and parsley.
  5. Pour the dressing over the vegetable mixture.
  6. Toss well to ensure everything is evenly coated.
  7. Serve immediately or refrigerate for 30 minutes to allow flavours to meld.
  8. Enjoy as a side dish or a refreshing topping for sandwiches and tacos.
